Fruit flies behind the bar: how do you tackle the source?
Check fermenting drink residues, fruit, empty bottles and waste before setting more traps. Include areas under equipment and along waste-handling routes. If the flies are unclear, have the species identified: drain flies require different source checks.
Check the entire bar workflow
Work through stock and preparation, then used glasses, bottles and waste. Residues can remain at every transition. Also look at hard-to-reach areas under or behind equipment.
Where flies are flying is not always where they develop. Record sightings and relate them to source inspections.
Make cleaning verifiable
Remove affected fruit and organic residues, clean waste bins and keep waste sealed. Rinse used bottles and glasses according to your workflow.
Agree who cleans behind appliances and under storage areas. A clear plan prevents every employee from cleaning only the visible worktop.
Traps and drains
Traps can indicate activity, but do not replace source removal. Check that the insects really are fruit flies before choosing measures.
For hairy flies around drains, organic build-up may be relevant. Do not mix cleaning products, and have inaccessible drainage problems appropriately assessed.
Monitoring and business support
Track whether activity decreases and whether new sources are found. Involve those responsible for cleaning, waste and maintenance.
RBL can discuss an inspection and targeted follow-up approach for hospitality businesses. Your own food safety plan remains the basis for daily workflows.
